Fermentation

Cryomaceration technique initially, whereby the crushed grapes are held at low temperature prior to fermentation in order to develop the flavour. Fermented at a controlled temperature in steel casks and subject to a secondary fermentation process (‘Metodo Martinotti’ – Charmat method) whereby the wine is placed in sealed pressure tanks and a mixture of yeast and sugar is added to induce the second fermentation.

This ‘Charmat’ method is the very best process for making sparkling wines from aromatic grape varieties like pignoletto.

A delicate fragrance of wild flowers and acacia.

Flavour

Pleasantly soft and yet initially lively; the flavor hints of pear with a mellow strawberry finish.

As a semi-sparkling dry white wine our Pigno is an excellent alternative for those with a discerning taste looking for an alternative to prosecco. Ideal for special occasions and as a toasting wine or just for social drinking. This wine will be a real focus of conversation because of its uniqueness and style. Offering big citrus noses and taste, gentle and pleasing.

An ideal aperitif and as an accompaniment to a first course fish dish or any alfresco dining and barbeque.
